Summary

Tanzania Nsoga is produced by Nsoga Agricultural Marketing Cooperative Societies (AMCOS) in the Mbozi district of Songwe, established in 2020 by villagers from Nsonga and Idunda. Grown by 224 smallholders in the Idiwili, Idunda and Ipyana villages at 1300-1700 MASL. The Bourbon variety is processed as an anaerobic natural: red ripe cherry is hand sorted, floated, fermented for 72 hours in airtight food-grade barrels with a one-way valve, then dried on raised beds for 24-30 days to 10% moisture.
