Summary

A Colombian limited-edition coffee from producer Sebastián Ramiréz, grown at 1500-1744 m. The Pink Bourbon cherries are sorted to 95% ripe and 5% semi-ripe fruit at 18-20° Brix, then given a 120-hour anaerobic fermentation at 18 °C with wine yeast, depulped, and followed by a further 72-hour anaerobic fermentation with CO₂, watermelon and fruit glucose with pH monitoring. Beans are dried slowly and controllably for about 5 days at 40 °C and stabilised for 15 days in GrainPro bags. Flavour profile of watermelon, yellow melon and green melon; recommended for filter brewing.
