Summary

A Colombia Rosado from Yoiner Mosquera in Palestina, Southern Huila, grown at around 1,600 metres in Vereda El Portal. Cherries are picked at an advanced stage of ripeness, given a 72-hour anoxic resting period in-husk in a sealed container, then dried slowly in a greenhouse for approximately 20 days. The result is a complex, full natural Rosado with brightness and pronounced sweetness — notes of apricot jam, candied orange peel, orange and passion fruit with a juicy finish. It was the competition coffee for the first Sibarist × A.M.O.C. Cup in Rotterdam.
