Summary

Coffee from Finca Campo Hermoso, the project of third-generation coffee grower and Q-Grader Edwin Noreña, located in Circasia, Quindío, Colombia, at 1,600 masl. The variety is Sudan Rume, an old African landrace from the Boma highlands. Cherries are picked above 20 °Brix, washed and classified in water for 2 hours, then held 24 hours under low oxygenation at 18-22 °C. A 72-hour carbonic maceration in 2,000 kg tanks follows; the mosto collected at ~4.0 pH and 12.5 °Brix is inoculated with a specific yeast culture and Enigma hop powder. The cherries are then pulped leaving abundant mucilage for a Black Honey, and fermented a further 72 hours at 18 °C in 200 kg reactors with the inoculated mosto at about 30 ml per kg. Dried in a greenhouse under controlled conditions for about 10 days. Sensory profile: tropical fruit, stone fruit, pistachio and floral.
