Danche. Café De Etiopía

Summary

Danche is a washed Ethiopian coffee from the highlands of Yirgacheffe, grown at 2,000–2,300 metres on small family plots. Produced by Habtamu Fikadu Aga, who manages the Danche station through Kuri Mountain Coffee, working with smallholders cultivating local Ethiopian heirloom varieties. Ripe cherries are hand-selected, pulped, then fermented submerged for 48–72 hours before washing and a further 12-hour soak in clean water. The parchment is dried slowly on raised African beds for 10–12 days with regular turning. Sensory profile: apricot, blackberries, black cherry and lime.
