Campo Hermoso. Sidra. Café De Colombia
Summary
Campo Hermoso is a coffee from Colombia, produced by Edwin Noreña at Finca Campo Hermoso in Circasia, Quindío. The farm is known for experimental coffees, using a unique co-fermentation technique inspired by craft beer. The coffee is a Sidra variety, grown at 1750-1900 meters above sea level. It undergoes a Black Honey process with carbonic maceration, involving a 96-hour initial carbonic maceration, followed by a 48-hour anaerobic fermentation with recirculated must containing yeast, glucose, and amino acids. The coffee is dried on African beds under shade for the first 48 hours, then stabilized. Flavor notes include pineapple, mango, starfruit, and eucalyptus.
