Grown at 1750-1800 meters above sea level, this Bourbon Ají variety undergoes an advanced natural process involving pre-fermentation oxidation, anaerobic fermentation in cherry, and thermal shock, followed by slow drying on raised beds. The cup profile features blackberries, blueberries, raspberries, and jasmine.
