El Paraíso Lychee Peach Decaf is a specialty decaffeinated coffee from Finca El Paraíso, grown by producers Alex & Diego Bermúdez in Piendamó, Cauca, Colombia. Grown at 1,960 meters elevation, this Castillo variety coffee undergoes an innovative process: 36-hour anaerobic fermentation, a secondary co-fermentation with proprietary yeast, thermal shock treatment, and ethyl acetate (sugarcane) decaffeination. The cup is expressive and aromatic with notes of lychee, peach, dried strawberry, cardamom, yellow tropical fruit, cinnamon, and rosewater. It has a creamy body and crisp acidity.
