Summary
Single origin Castillo microlot from Acevedo, Huila, Colombia, grown at 1,400 meters by farmer Jose Rodriguez in collaboration with family-owned Cuatro Vientos. Processed as an exclusive anaerobic natural: handpicked cherries are floated, then fermented in sealed oxygen-free tanks before drying in the sun. The cup is intense, boozy and syrupy with a long finish, delivering notes of Aperol, mandarin and strawberry. Scored 87.8 cupping score. Brewed as a filter coffee (V60/Origami).
