Summary
Single-origin coffee from Finca San Jose in Nueva Segovia, Nicaragua, produced by Bismark Gomez. The small, shade-grown farm sits high in the mountains near Los Arados, bordering Honduras, and is managed with a strong focus on biodiversity and sustainable farming. This lot is a hand-harvested blend of Red Catuai and Caturra varietals grown on steep volcanic slopes, washed processed with water directed into oxidation lagoons, and slowly dried over several days at the mill. In the cup it offers almond-like nuttiness and pear sweetness when brewed black, and frangipane and crème pâtissière notes with milk. Brewing guide: 18g in, 36g out, in 28-32 seconds.
