Summary
Jo's Papayo is a Colombian specialty coffee from Finca Buenos Aires, produced by Jhonatan Zúñiga in the Huila region (Pitalito). This Arabica variety, also known as Ombligón, was grown at 1800 meters above sea level. The natural processing involves 36 hours of oxidation, 48 hours of anaerobic fermentation, and 24 hours of immersed fermentation with recirculation, followed by slow drying below 37°C. In the cup, it offers notes of almond, cranberry, raspberry, and melon, with bright acidity, a silky body, and a persistent, fruity finish.
