The Castillo variety undergoes an anaerobic fermentation process in sealed plastic bags for 100-120 hours, followed by drying on raised beds for 15-20 days. The coffee presents vibrant acidity with notes of raspberry, blackberry, and blueberry, complemented by sweet and rum-like characteristics, resulting in a surprisingly clean and juicy body. Roasted with a light profile suitable for both espresso and filter preparation.
