Summary
EL ROSAL is a washed coffee from Colombia's Huila region, produced by Wilmer Cubillos. It features the Papayo variety, named for its papaya-shaped cherries. Processing begins with an 18-hour fermentation in jute bags, followed by depulping and an additional 6-hour fermentation in mucilage before washing and drying on raised beds for 8–15 days. Flavour notes include blackcurrant, pear, and blueberry. The coffee has a light roast level and is suitable for both espresso and filter preparation.
