La Piragua - Colombia - Pink Bourbon
Summary
A natural Pink Bourbon lot from La Piragua, a 10-hectare farm in Huila, Colombia, run by Alexander Vargas, a four-time Cup of Excellence finalist. Whole cherries undergo a 72-hour oxidation followed by a 98-hour anaerobic fermentation in barrels with degassing valves, then dry for 20 days in a solar shed to 10.10% moisture. Grown at 1800 masl on mineral-rich black soils. Pink Bourbon is an Ethiopian landrace famed for florality and citrus; this lot is sweet and rich yet juicy and clear, with notes of orange, cherry and milk chocolate.
