Summary
A single-origin coffee from Wilton Benitez at Granja Paraiso 92 in Cauca, Colombia. Grown at 1800-2100 masl on volcanic soils. The Tabi variety (a cross of Bourbon, Typica and Timor Hybrid) is processed using Wilton's Advanced Washed method involving ozonated water, UV sterilization, controlled fermentation with brewers yeast, anaerobic fermentation, thermal-shock washing, and mechanical drying. The cup profile is sweet with candy-fruit notes and complex herbal-florality, featuring notes of lime, strawberry, and verbena.
