Colombian coffee from Finca Milan in Pereira, Risaralda, grown at 1600-1900 m from Caturra variety. Fully ripe cherries undergo controlled fermentation with fresh pineapple, peach and blackberry using wild yeasts, followed by a 24-hour anaerobic phase in a nitrogen-enriched environment, named "Sakura" for its floral character. The cup opens with elegant floral aromas and fresh sweet yellow grape, deepening into silky vanilla sweetness and ripe blueberry, with a clean, delicate finish. Best suited to filter brewing such as V60 and Kalita.
