Ultra Violet | Colombia
Summary
A washed blackberry co-ferment Castillo from producer Jairo Arcila in Quindío, Colombia. Ripe Castillo cherries are selectively hand-harvested, floated and sorted, then co-fermented with fresh blackberries before a careful wash and slow drying with close moisture control. In the cup, deep and saturated blackberry and blueberry up front, a creamy boysenberry-ice-cream sweetness through the middle, and a soft botanical note on a composed, long finish. Rich, purple and quietly wild.
