Summary
Argote Juan Pablo Super Special from Shokunin is a single-origin coffee from the Argote family farm in Génova, Nariño, Colombia. Grown at 1,950-2,000 meters above sea level, this lot is composed of 90% Castillo and 10% Caturra varieties. The coffee undergoes a complex double anaerobic process: approximately 12 days of lactic anaerobic natural fermentation followed by approximately 13 days of alcoholic anaerobic washed fermentation, completed with a thermal shock at 70 degrees Celsius. The cup profile offers bright aromas of lime zest and jasmine, intense sweetness reminiscent of cherry, and a smooth, maple syrup-like body. This Shokunin exclusive lot represents the culmination of years of experimentation by producer Juan Pablo Argote.
