Lizeth Samboni La Esmeralda Sidra
Summary
A washed Sidra from producer Lizeth Samboni at La Esmeralda in Huila, Colombia, grown at 1,780 masl and harvested in March 2026. The cherries are hand-picked at peak ripeness, floated, de-pulped on the day of harvest, dry-fermented for 48 hours, washed, and dried on raised beds to 10.5% moisture. Sidra is a rare variety in Colombia, understood to be an Ethiopian Landrace, and this lot reflects the growing varietal diversity in Huila.
