David Berrio La Casita - Surprise Encore Chiroso
Summary
A single-farm Colombian coffee from David Berrio's La Casita, a 1.5-hectare garden-like plot at extreme elevation in Urrao, Antioquia. Grown at 2,100 masl and made up entirely of the Chiroso variety, an Ethiopian landrace now cultivated mainly in Antioquia. Processing is washed: hand-picked at peak ripeness, floated, held in-cherry for 24 hours, de-pulped, then fermented underwater in stainless steel tanks using the cochadas method before drying to 10.5% moisture.
