Summary
A washed coffee from Colombia, produced by third-generation farmer Elmer Sarmiento at the Nuevo Horizonte farm in Vereda Canaan, Santa María, grown at 2000 meters altitude. The Colombia variety coffee offers flavour notes of clementine, blackberry, and blood orange. The farm spans 2.5 hectares with approximately 10,000 coffee trees shaded by banana and fruit trees, with volcanic soil ideal for specialty coffee production. Only ripe red cherries are hand-picked, then after pulping the coffee is sealed in transparent bags for 36-48 hours of controlled fermentation, thoroughly washed, and dried on raised beds for 15-20 days.
