This coffee from Colombia is produced by third-generation farmer Elmer Sarmiento on the Nuevo Horizonte farm in the Vereda Canaan region of Santa María. Grown at 2000 meters altitude, the Colombia variety undergoes wet processing. The cup profile presents sweet clementine, ripe blackberry, and a refreshing blood orange finish. The farm spans 2.5 hectares with approximately 10,000 coffee trees shaded by banana and fruit trees on volcanic soil. Only ripe red cherries are hand-picked, floated to remove defects, then sealed in transparent bags for 36-48 hours of controlled fermentation before thorough washing and drying on raised beds for 15-20 days.
