The Red Bourbon variety undergoes a special fermentation process involving oxidation, pre-fermentation with red fruits and yeasts, and anaerobic fermentation, followed by sun drying. It offers tasting notes of hibiscus, rooibos, and blackberry, with a citric acidity and creamy body.
