Colombia Dos Quebradas Lavado Filtro
Summary
Colombia Dos Quebradas is a washed coffee from the Palermo region in Huila, Colombia, produced by Daimer Polanía, a third-generation coffee farmer. Grown at 1800 meters above sea level, this lot features the Caturra variety, known for its balance and clarity. The cup profile offers notes of orange blossom, black tea, and bergamot, with a grapefruit citrus acidity, elegant body, and refreshing finish. The processing involves manual harvesting of ripe cherries, flotation selection, 12-hour oxidation in a hopper, pulping, 36-hour aerobic dry fermentation with constant movement, washing, and 15 days of drying in a marquee, followed by 15 days of resting before commercialization.
