
Ají Las Flores
Summary
Colombian specialty coffee from Finca Las Flores in Acevedo, Huila, grown at 1750 meters. The Bourbon Ají variety undergoes a washed process with 12 hours of oxidation before depulping, thermal shock at 50°C, 80-hour controlled fermentation with inoculated bacteria, and 60-hour mechanical drying. Flavour profile includes notes of muscat grape, cocoa butter, lemon verbena, peach, caramel, strawberry lollipop, and lime zest, with bright acidity and a silky body. The farm was founded in 1990 by Edilberto Vergara and Nubia Ayure, now managed by their son Jhoan Vergara, who won the Master of Coffee competition in 2019.
