Albino Ibias
Summary
Single-producer lot from Albino Ibias in Acconcharcas, deep in the Incahuasi Valley, Cusco, Peru, grown at 2,050 masl. The variety is Geisha Inca (SL9), a local heirloom of Ethiopian origin. Processing combines 48 hours of dry anaerobic fermentation in the cherry's own mucilage, followed by a second 36-hour dry fermentation after pulping, then a full wash and 10 days drying on raised beds. In the cup: pineapple, peach and pear in syrup, with loquat, apricot and caramel developing as the cup cools; syrupy dense body and a round, juicy acidity.
