Symbiosis is a Geisha coffee from Finca Deborah in Volcan, Panama, produced by Jamison Savage. The cherries are hand-picked with a Brix of 21-24, double-sorted, and fermented over 100 hours in sealed tanks without inert gas, creating a natural anaerobic environment. After fermentation, the coffee is dried on African beds for about 20 days. The cup is complex with lychee sweetness, vibrant acidity of caramelized plums, and lingering notes of fine port wine. Cupping score 93, grown at 1950m.
