Summary
Single-origin specialty coffee from Colombia, grown at 1650m in the Huila region, Palestina, at Finca El Cedro, a two-hectare farm run by Henry Munoz and Monica Berdugo. The coffee is 100% Arabica of the Maracaturra variety, processed using the washed method: hand-selected ripe cherries, two days of resting, 48-hour fermentation in mucilage, and 20-25 days of drying. Light roasted, it offers a juicy, well-defined acidity, creamy texture, and a complex flavour profile with notes of lime, Reinette apple, and carrot, with a long, lingering finish. Recommended for filter brewing methods such as Drip, Chemex, and Aeropress.
