El Silencio
Summary
Honey-processed Colombian coffee from producer Robinson Rivera at Finca El Silencio in Piendamo, Cauca, grown at 1700-2100 m with the Castillo variety. Rivera harvests only very ripe cherries with high sugar content, floats them to remove defects, oxidizes the coffee 12 hours in a washing tank, depulps and ferments it in mucilage for 36 hours, then dries the parchment in a parabolic dryer for five to six days to 10% moisture. The cup is a filter coffee with autumn aromas of sweet blood orange and honey spices reminiscent of honey gingerbread, finishing with the sweetness of ripe figs.
