
Esko (caturra, Marsellesa, Typica)
Summary
Esko is a versatile espresso coffee from smallholder farmers in Tenejapa, Chiapas, Mexico, an area home to the Tzotzil Maya community. It is grown from Caturra, Marsellesa, Costa Rica and Typica varieties and processed using the traditional washed method: hand-picked cherries are depulped, fermented for 12–17 hours, washed in water channels and sun-dried for 12–14 days. The cup is balanced, moderately sweet with a lighter body and gentle acidity, offering notes of black tea, lemongrass and chocolate with almonds. Suitable for espresso, it works well with milk or black.
