Hacienda Sonora Cascara

Summary

This cascara comes from Hacienda Sonora farm in Costa Rica's West Valley region, produced by Diego Guardia. The ripe coffee cherries are washed in clean water and dried on raised beds with regular turning for several days, then rested for 2 months before dry milling. The dried cherry skins produce an infusion with notes of hibiscus, rooibos, and rosehip. Varieties include Catuai, Caturra, Marsellesa, Sarchimor, and SL28. Grown at 1200-1300 meters above sea level.
