This exceptional lot comes from Panama, specifically the prestigious Boquete region, one of the world's most recognized terroirs for high-end coffees. Grown at 1,550 meters above sea level, this Geisha variety coffee expresses the full potential of a unique environment marked by volcanic soils, biodiversity, and a privileged microclimate. The farm belongs to José Luttrell, founder of Abu Coffee, a project born after inheriting the family farm and deciding to transform it into a specialty coffee laboratory. Under his philosophy of 'coffee designers', the team seeks to design unique sensory profiles through experimental processes, achieving innovative, complex, and extraordinarily clean coffees. Located in Cañas Verdes, on the slopes of the Barú Volcano National Park, the farm benefits from a protected ecosystem with deep, fertile, well-drained volcanic soils. The combination of natural shade, balanced sun exposure, and constant tropical mist allows slow cherry ripening, favoring higher sugar concentration and cup complexity. This lot has been processed using an innovative Natural Fermented Double Phase method: manual harvesting at optimal ripeness, manual selection and flotation with spring water, first phase: pre-drying in the sun for 24 hours on African beds, second phase: anaerobic dry fermentation for 144 hours in sealed GrainPro bags submerged in spring water, final sun drying for approximately 25 days. This process intensifies the coffee's aromatic expression, enhancing vibrant fruity profiles without losing clarity or elegance.
