El Diviso Chiroso

Summary

A specialty coffee from Colombia's Huila region, produced by Nestor Lasso at Finca El Diviso in Pitalito. The Chiroso variety is processed using a Natural Anaerobic Thermal Shock method: 48 hours of oxidation with recirculated leachate, followed by anaerobic fermentation with Saccharomyces cerevisiae T58 yeast, a thermal shock at 50°C, then mechanical drying (12 hours) and sun drying (15 days). Flavour notes include rhubarb, cherry candy, redcurrants, and cranberry.
