This decaffeinated coffee from Colombia's Tolima region is produced by Elias and Shady Bayter at El Vergel. The Caturra and Colombia varieties undergo a two-stage fermentation: an initial 48-hour anaerobic fermentation, followed by co-fermentation with watermelon for five days. The beans are then pre-dried on patios and mechanically dried in static silos, resting for 30 days. Decaffeinated using the Swiss Water process, it offers tasting notes of watermelon, orange, brown sugar, and floral.
