Colombia | Santiago Salas
Summary
A washed Chiroso coffee from Finca La Marulanda, a 2-hectare farm in La Cartagena, Urrao, Antioquia, Colombia, grown at 1800 MASL by producer Santiago Salas. The cup is ripe and fruit-forward with notes of nectarine, jackfruit, orange and coconut cream. Cherries are picked at peak ripeness and processed using the Cochadas method: each daily picking is depulped and added to a fermentation tank with a small amount of water throughout the week, parchment is washed together after 4-5 days, and seeds are dried for 12 days.
