Tucán Filtro is a Colombian coffee from the Huila region, produced by Hertson Bernal at Finca La Esperanza. This Castillo variety undergoes a natural process with 300-hour anaerobic fermentation and Sleeping Bag drying. It offers a funky profile with citrus and tartaric acidity, a honeyed body, and notes of pomelo, white wine, light caramel, and tropical fruit. Roasted for filter brewing, it scores 89 SCA points.
