Summary
Coyote is a limited edition coffee from El Salvador, produced by Andrés Salaverría at Finca San Francisco in the Apaneca-Ilamatepec region. It is a SL28 variety processed with anaerobic honey, grown at 1500 meters. The cup profile is funky and liquor-like, with notes of brownie, peach jam, moscatel, and cantaloupe melon, evolving as it cools. It has a creamy body and tartaric and lactic acidity. This coffee is part of the Hidden Collection, developed in collaboration with the producer.
