Colombia Las Flores Washed Cherry Oxidation Java is a single-origin coffee from Finca Las Flores in Acevedo, Huila, Colombia. The farm was started by Edilberto Vergara and Nubia Ayure and is now run by the Vergara family, including Jhoan Vergara. This experimental lot features the Java variety grown at 1,750 meters. The washed oxidation process involves 24 hours of oxidation in cherry, pulping, 60 hours of fermentation in cherry, and thermal shock washing at 55°C, followed by 50 hours of drying in dehumidifying machines. Tasting notes include floral, mandarin, strawberry, watermelon, and raspberry.
