Summary

Limited release Colombian coffee from Finca Nogales in Pitalito, Huila, grown from Typica, one of the oldest varieties preserved on the farm for generations. After selective picking and sorting, the coffee undergoes a washed botanical fermentation: fresh cascara juice builds the fermentation mosto, with food-grade botanical aromatic extracts of banana and blood orange added. It ferments around six days in controlled conditions, then is thoroughly washed and slowly dried on covered raised beds. The cup shows banana, tropical fruits, vanilla and a milkshake-like texture with clean sweetness, retaining Typica's structure. Roasted for filter.
