The coffee features the Bourbon Sidra variety, harvested at peak ripeness with Brix degrees of 24-26. Cherries undergo 48 hours of oxidation, a thermal shock at 50°C, and sealed anaerobic fermentation, followed by mechanical drying for 12 hours and 15 days of sun drying. Tasting notes include Turkish delight, milky oolong, and pineapple berries. Roasted as a filter profile.
