Summary
This decaffeinated microlot from Jhoan Vergara's farm in Huila, Colombia, is grown at 1,750 meters. Made from the rare Pink Bourbon variety, it is processed with a complex washed method including 36 hours of oxidation, a 60-hour anaerobic fermentation with mosto, and quenching, then decaffeinated with ethyl acetate. In the cup it offers fruity strawberry and cashew notes with a nutty-caramel sweetness, floral hints, lively acidity and a soft body.
