
Jairo Arcila Green Apple Co-ferment Colombia
Summary
Jairo Arcila, a third-generation coffee grower from Quindio, Colombia, produced this Castillo variety coffee on his farm Santa Mónica. The coffee underwent a meticulous 72-hour anaerobic fermentation with the pulp on, infused with green apples to enhance its crisp acidity and juicy sweetness (green apple co-fermentation). After fermentation, the cherries were pulped and slowly dried on raised beds. Grown at 1450-1500 masl. Tasting notes include green apple hard candy, honeydew melon, and juicy character.
