Agua Bonita - Colombia
Summary
Agua Bonita is a Colombian coffee from Finca Agua Bonita in Palestine, Huila, grown at 1,700 m asl by producer Rosalba Mateus Guerrero. The farm, once a tropical fruit project, now holds over 15,000 coffee trees of Caturra, Castillo and Rosé Bourbon. Ripe cherries are floated, fermented anaerobically for 100 hours in sealed tanks, given a 40 °C thermal shock, then dried on African beds in the shade for 28 days. The cup shows bright, clean acidity, a silky medium body, notes of stone fruit, jasmine and orange blossom with panela and white chocolate, and a long sweet finish.
