Summary
Arley Vargas is a natural-processed Pink Bourbon coffee from Huila, Colombia, grown at 1800m on the family farm La Piragua. The lot undergoes a double fermentation: a 72-hour oxidized fermentation followed by a 98-hour anaerobic fermentation in barrels with degassing valves, then slow drying in covered sheds for 15–20 days. Flavour notes include lime and grapefruit. Roasted very light.

- 0:00Use the inverted method with the traditional filter. Add 18g of coffee and pour 260g of water heated to 205°F. Let sit upright for 5 minutes with flow control.
