Colombia Geisha Black Honey Experimental
Summary
"Sunday Drive" is a rare experimental coffee from Edwin Noreña's Campo Hermoso R&D Center in Quindío, Colombia, produced from Geisha cherries picked above 18° Brix. The cherries were soaked, sorted and rested 24 hours in low oxygen before 160 hours of carbonic maceration in a 40°C bioreactor, then depulped to black honey and inoculated for 72 hours with a native yeast from the same variety, followed by fifteen days of controlled greenhouse sun-drying. The cup shows hibiscus tartness, Earl Grey florals, juicy lychee sweetness, strawberry candy, milk chocolate and cherry blossom. Enjoyable as espresso or filter.
