Colombia Caturra Black Honey Experimental
Summary
A rare experimental Caturra grown by Pedronel Ospina at Finca Sicilia in Quindío, Colombia, and processed at Edwin Noreña's Campo Hermoso lab. After carbonic maceration, the mosto released by the cherries was cultured with yeast and rose apple; the cherries were then pulped to black honey, keeping mucilage intact, and the cultured mosto was dosed back over them before ten days of greenhouse sun-drying. Expect grape soda sweetness, rose water lift and dark blackberry depth. Works as espresso, with milk, or as filter.
