A filter-roast coffee from Finca La Cabaña, grown by William Ortiz and his family in Bruselas, Huila, Colombia at 1600-1700 masl. The Pink Bourbon variety undergoes an anaerobic washed process involving 36 hours of anaerobic fermentation before pulping, followed by another 36 hours of anaerobic fermentation in plastic buckets, then washing and drying. The cup is complex with medium citric-malic acidity and notes of wild strawberry, nectarine, and oolong tea, with a sweet and fruity profile. Cupping score: 87.
