
El Marchito
Summary
El Marchito is a single-origin coffee from producer Justiniano Paya, grown on Finca El Marchito in the Gaitania village, Planadas region of Tolima, Colombia at 1600-2100 meters above sea level. The coffee is of the Colombia variety and processed using anaerobic fermentation: cherries are fermented for approximately 120 hours in anaerobic conditions in plastic bags, then pulped, washed, and fermented in parchment for 24-60 hours before drying in greenhouses for 72-240 hours. The coffee offers flavour notes of dark chocolate, cinnamon, and tangerine.
