Panama: Finca Deborah Illumination
Summary
Panama Gesha from Finca Deborah, produced by Jamison Savage in Volcán, Tierras Altas, grown at 1900–2000 m. Illumination Process: pulped with mucilage left on, fermented about 100 hours in sealed tanks with limited oxygen, then washed and slowly shade-dried on raised beds. In the cup it opens with peach and mango, followed by black cherry, honey and black tea; floral and citrus notes emerge as it cools, with clean malic acidity, a velvety body and a crisp finish. Recommended for filter.
