Panama: Finca Deborah Enigma
Summary
A Gesha from Finca Deborah in Volcán, Chiriquí, Panama, grown at 1900 m by Jamison Savage. Whole cherries undergo natural carbonic maceration in sealed, oxygen-free tanks with monitored temperature, pH and pressure, then dry slowly in the shade on raised beds. In the cup it opens with purple grape and ripe cherry, followed by cocoa nib and fresh thyme; as it cools, red plum and pineapple emerge. Bright, velvety structure with a clean, lasting finish. Recommended for filter.
